for sand dollars try starting with a lental press, flaten on one side and detail as you would like with a razor tool or poker (or both) and maybe some stringer depending on how you want your dollar to look. Take a picture of a sand dolar for reference.
starfish... i make some wonky looking stars and decorate with stringer dots, i usually use a stamen cane type stringer, or one like for jellyfish tenticles. i like them like that. you can start with a small spree shape and add dots and pull for legs and crease the inside with a tool of somesort for crisper edges. i hope that helps, sorry i don't have any pics.
